On a sunny autumn afternoon, pick as many hawthorn berries as possible. Wash the berries thoroughly and simmer gently for a few hours. Then strain and press the liquid through a cheesecloth. Add the same amount of sugar and the juice of two lemons. Bring this liquid back to a boil. While the juice is still hot, pour it into a prepared glass bottle. Seal tightly and turn it over a few times to sterilize every last bit of air. Keep refrigerated until ready to use.
