Zucchini sauce alla Stephi

Ingredients for 2 servings:

  • 1 m.-large zucchini
  • 1 small onion(s)
  • 150 ml vegetable stock
  • salt and pepper
  • chili powder
  • 30 g processed cheese or Parmesan

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Zucchini pasta sauce

Peel the onion and dice it into small cubes. Wash the zucchini and also dice it finely. Sauté the onion in a non-stick pan. Then add the zucchini and season with salt. Simmer for about 5 minutes. Then deglaze with the stock (a little more or less, depending on how watery the zucchini is). Simmer for about 10 minutes. Add the cheese toward the end of the cooking time. Purée the sauce and season with salt, pepper, and chili.
