Garlic and onion soup with smoked pork

Ingredients for 4 servings:

  • 400 g onion(s),
  • 40 g garlic
  • 400 g potatoes
  • 200 g carrot(s)
  • 250 g smoked pork, cooked, finely diced
  • 1 tsp, levelled pepper, white
  • 1 tsp, heaped paprika powder, sweet
  • 1 tsp, heaped marjoram, shredded
  • 1 tbsp, heaped celery leaves, shredded
  • 1 tbsp, heaped flat-leaf parsley, shredded
  • 1 liter vegetable broth
  • n. B. Salt
  • Fat for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Peel and finely dice the onions and garlic. Wash, peel, and finely dice the potatoes and carrots. In a greased pot, fry the onions, garlic, potatoes, and carrots, turning frequently, until they begin to brown. Add the diced meat, paprika, and pepper, and sauté briefly. Stir in the herbs and deglaze with the broth. Bring to a boil. Season with salt and cover the pot. The soup should simmer gently for about 15 minutes, until the potatoes are tender. Season again with salt before serving, if desired.
