Ingredients for 1 servings:

  • 250 g mango(s)
  • 350 g papaya
  • 50 g desiccated coconut
  • 200 g gelling sugar (3:1)
  • 100 ml juice (mango juice), if necessary
  • ½ tsp ginger, freshly grated

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Mango – papaya – coconut jam

Pit ripe, fresh fruit and cut into small cubes. Place all ingredients in a saucepan, blend, and simmer uncovered for about 30 minutes. Test for settling and simmer for longer if desired. We prefer it a little runny, but you can, of course, simmer it longer if you like. Meanwhile, sterilize the thoroughly rinsed jars in the oven at 200°C for 10 minutes. Then fill the jam into the prepared twist-off jars, seal tightly, and place upside down on the lid to cool. It will keep for about 3 months…although I can’t guarantee this, as it never lasts that long. Makes about 4 jars.
