Ingredients for 12 servings:

  • 100 g ladyfingers
  • 4 tbsp Calvados or apple juice
  • 700 g applesauce
  • 250 g quark (20% fat)
  • 250 g mascarpone
  • ⅛ liter milk
  • 180 g sugar
  • 200 g cream
  • cocoa

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Arrange the sponge fingers sugar-side down in a shallow dish and drizzle with half of the Calvados. Mix half of the applesauce with the remaining Calvados and spread on top. Place the other half of the applesauce on top. Mix the quark, mascarpone, milk, and sugar. Whip the cream and fold in. Spread everything over the applesauce and dust with cocoa. Chill.
