Goji berry and tomato noodles

Ingredients for 2 servings:

  • 3 tbsp goji berries, dried
  • 250 g tomatoes, small
  • 50 g spinach
  • 2 cloves of garlic or 1/2 bulb of Chinese solo garlic
  • 1 shallot(s)
  • 2 sprigs of oregano
  • Salt and pepper, white, from the mill
  • 3 tbsp olive oil
  • 250 g whole wheat pasta
  • 2 tbsp pine nuts
  • 2 tbsp breadcrumbs

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Soak the goji berries in a little warm water. Wash and halve the tomatoes. Peel and finely chop the garlic and shallot. Finely chop the oregano and mix with the goji berries and tomatoes. Wash the spinach and shake dry. Heat 2 tablespoons of oil in a pan. Sauté the diced onion and garlic. Add the spinach and let it wilt. Stir in the tomatoes and heat through. Season with salt and pepper. Cook the pasta in salted water according to the package instructions. Chop the pine nuts. Add the remaining oil to a pan and heat. Stir in the pine nuts and breadcrumbs until crispy and lightly salt. Drain the pasta, mix with the tomato sauce, serve, and sprinkle with the breadcrumbs and seeds.
