Ingredients for 2 servings:
- 1 avocado(s), ripe
- 1 clove(s) garlic
- 1 zucchini
- 1 tomato(s)
- 250 g spaghetti or another type of pasta
- salt and pepper
- 1 dash of lime juice
Instructions
Working time approx. 5 hours; Cooking/baking time approx. 10 hours; Total time approx. 15 hours
Cook the pasta according to the package instructions. Slice the zucchini and fry in a pan with a little oil. Meanwhile, mash or puree the avocado, add the crushed garlic and lime juice, and mix everything together. Season with salt and pepper. Dice the tomato. Drain the pasta, reserving some of the pasta water. Add the pasta and tomato to the zucchini in the pan, add the avocado cream, and mix everything together. Add a little more pasta water if needed to make the sauce nice and creamy. Season again to taste.
