Ingredients for 2 servings:
- 2 pork schnitzels or turkey breast fillet
- 3 tbsp pesto, red
- 2 small zucchini
- 100 g cheese, grated
- 1 small onion(s)
- 1 tbsp oil
- 2 class can/n tomatoes (Pizza tomatoes)
- 4 tbsp tomato ketchup
- salt and pepper
- Fat for the mold
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
For the tomato sauce, peel and finely chop the onion, and fry in hot oil. Add the pizza tomatoes and tomato ketchup, cook for a few minutes, and season with salt and pepper. Wash and coarsely grate the zucchini. Brush the schnitzels with the pesto on both sides. Grease a baking dish, place the schnitzels in it, and sprinkle with the grated zucchini. Pour the tomato sauce over the schnitzels and sprinkle with the cheese. Bake in a preheated oven at 190°C for about 20 minutes. Serve with baguette and salad.
