Parsnip and radish salad

Ingredients for 2 servings:

  • 120 g parsnip(s)
  • 120 g black radish(s)
  • little salt
  • 100 g sour cream
  • 2 tbsp milk
  • 1 tbsp walnut oil
  • 1 tsp lime juice
  • 2 tbsp raisins or amount as desired
  • salt and pepper
  • Sugar, brown sugar, or honey

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Total time approx. 25 minutes

Wash or peel the parsnip and radish, depending on your preference. Then grate them and let them stand in a bowl with a little salt for 15 minutes. If you used too much salt, you can drain the water; I always use so little salt that it’s not necessary. Make the dressing from the ingredients and add it. Season to taste. You can enjoy it immediately, but letting the salad stand for a while will intensify its flavor.
