Crispy duck breast from the contact grill

Ingredients for 2 servings:

  • 600 g duck breast with skin
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Wash the duck breast, dry with kitchen paper, and remove any tendons, silver skin, and feathers. Make diamond-shaped cuts in the skin with a sharp knife. Season the duck breast generously with salt and pepper on both sides. Preheat the contact grill using the steak program with the grill boost function activated. Once the temperature is reached, grill the duck breast, skin-side up, until medium-rare. Wrap the grilled duck breast in aluminum foil and let it rest in the oven at approximately 80°C for 10 minutes. To serve, slice the duck breast and baste with the meat juices. Serve with red cabbage and dumplings.
