Apple and blueberry cold soup

Ingredients for 2 servings:

  • 150 g yogurt
  • 100 g cream cheese
  • 1 apple
  • 100 ml blueberry puree
  • lemon juice
  • biscuit(s), (amarettini)
  • Powdered sugar, as desired

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Total time approx. 35 minutes

Mix the yogurt with the cream cheese well. Peel the apple and grate it into the yogurt. Season with lemon juice and powdered sugar, if desired. Lightly stir in half the blueberry puree; it should have a nice marbled texture. Pour into dessert glasses, top with amaretti biscuits, and spoon the remaining puree over the top. Chill for 20 minutes.
