Strawberry sparkling wine dessert

Ingredients for 12 servings:

  • ¾ liter sparkling wine, semi-dry
  • 2 packets of pudding powder (cream)
  • 6 tbsp sugar
  • 750 g strawberries, fresh or frozen
  • 2 tbsp sugar
  • 500 g mascarpone

Instructions

Working time approx. 50 minutes; Total time approx. 50 minutes

Take 100 ml of the sparkling wine and mix it with both sachets of pudding powder and the sugar. Bring the remaining sparkling wine to a boil. Remove the pan from the heat, add the mixed pudding powder and bring to a boil briefly while stirring. Immediately transfer the sparkling wine pudding to a bowl and cover with cling film to prevent a skin from forming. Allow the pudding to cool. Wash fresh strawberries, drain well and remove the stems (thaw frozen strawberries). Purée one third of the strawberries with the sugar and quarter the remaining strawberries. Using a hand mixer, mix the pudding and mascarpone until creamy. Divide the strawberry purée between 12 glasses (including champagne glasses). Pipe a good half of the sparkling wine cream onto the strawberry purée using a piping bag. Now place the quartered strawberries (reserving 12 strawberries for garnishing) onto the cream in the glasses. Then spread the remaining sparkling wine cream on top with a piping bag and refrigerate until ready to serve. Before serving, arrange the strawberries on top of the cream and serve. Tip: If desired, decorate with chocolate biscuit sticks (e.g., Mikado sticks).
