Eggnog cake for a small cake pan

Ingredients for 1 servings:

  • 100 g flour
  • 80 g cornstarch
  • 80 ml oil
  • 2 eggs
  • 2 tsp baking powder
  • 100 ml egg liqueur
  • 100 g powdered sugar

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes

approx. 18 cm diameter

Combine all ingredients, except the powdered sugar, with a hand mixer until a smooth batter forms. Stir until fluffy. Pour the batter into a greased mini cake pan and bake at 160°C (convection oven) for about 25 minutes. Let the cake cool in the pan and then remove it from the pan. Dust with powdered sugar before serving. It makes a perfect little souvenir.
