Ingredients for 1 servings:
- 200 g sugar
- 4 eggs
- ½ lemon(s), juice and zest
- 1 tsp cinnamon powder
- 1 pinch of salt
- 200 g pumpkin flesh, grated
- 120 g almonds
- 100 g flour
- 1 tsp baking powder
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes
Beat the sugar and eggs until light and fluffy. Stir in the cinnamon, salt, pumpkin, ground almonds, and zest and juice of half a lemon. Sift the flour and baking powder and stir in. Pour into a 22-24 cm springform pan or a bundt pan (approx. 2 l capacity). Bake in a preheated oven (on the lowest rack) at 180°C for approximately 40-50 minutes.
