Ingredients for 2 servings:
- 600 g chicken drumstick(s)
- 500 g sweet potatoes
- 2 tbsp sauce (black bean sauce)
- 2 tbsp oil
- 1 tsp sauce (Habaneros-Dragon Fire)
- 1 tbsp lime juice
- 1 tbsp chili sauce, sweet
- 1 tbsp maple syrup
- 1 tbsp fish sauce
- 1 tsp pepper
- 1 tsp apple cider vinegar, clear
- 2 cloves garlic, Chinese
- 4 cm ginger, grated
Instructions
Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour; Total time approx. 13 hours 15 minutes

Mince the garlic cloves and finely grate the ginger. Place the drumsticks, along with all the ingredients except the potato, in a freezer bag and marinate in the refrigerator, ideally overnight. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Thinly slice the potatoes and layer them in a baking dish. Place the drumsticks on top and pour the marinade over them.
