Chicken drumsticks on sweet potato

Ingredients for 2 servings:

  • 600 g chicken drumstick(s)
  • 500 g sweet potatoes
  • 2 tbsp sauce (black bean sauce)
  • 2 tbsp oil
  • 1 tsp sauce (Habaneros-Dragon Fire)
  • 1 tbsp lime juice
  • 1 tbsp chili sauce, sweet
  • 1 tbsp maple syrup
  • 1 tbsp fish sauce
  • 1 tsp pepper
  • 1 tsp apple cider vinegar, clear
  • 2 cloves garlic, Chinese
  • 4 cm ginger, grated

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour; Total time approx. 13 hours 15 minutes

Mince the garlic cloves and finely grate the ginger. Place the drumsticks, along with all the ingredients except the potato, in a freezer bag and marinate in the refrigerator, ideally overnight. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Thinly slice the potatoes and layer them in a baking dish. Place the drumsticks on top and pour the marinade over them. Bake in the oven for about one hour, turning the drumsticks after 30 minutes. Note: You can find the recipe for Habanero Dragon Fire on my profile page or in the database.
