Duck skewers

Ingredients for 4 servings:

  • 2 duck breasts (350-400 g each) with skin
  • Pinch(s) of salt and pepper
  • some olive oil or rapeseed oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash both duck breasts and pat dry. Then cut them lengthwise into very thin strips (important!). Season with salt and pepper. Finally, marinate them in oil. I do this by placing the strips in a freezer bag with oil, sealing it with a clip, and rubbing the oil all over the outside. Thread the meat onto the skewers in an accordion-like pattern. Place one thin side lengthwise over the wooden skewer. Place all skewers on aluminum grill trays and grill. The skin will become crispy and the fat will render out.
