Ingredients for 4 servings:

  • 250 g mascarpone
  • 250 g cream
  • 2 egg yolks
  • 4 egg whites
  • 4 packets of vanilla sugar
  • 70 g sugar
  • 2 sheets of gelatin
  • e.g. strawberries
  • some mint or cocoa powder

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

Mascarpone cream with strawberries, for 4 large portions

First, beat the egg whites and cream separately until stiff peaks form and set aside. Then, mix the mascarpone with the egg yolks, sugar, and vanilla sugar until a semi-creamy mixture forms. Soften and melt the gelatine according to the package instructions, then add it to the mixture and mix well. Add the stiff cream and fold in with a whisk. Also fold in the beaten egg whites. Now put the cream in the fridge. In the meantime, wash the strawberries, drain well, and cut into pieces. Then fill the glasses with the strawberries and pour the cream over them. If you like, you can sprinkle some cocoa powder over the top and decorate the dessert with a mint leaf. Then put it back in the fridge and let it sit for a while.
