Pesto with basil, mint and orange

Ingredients for 4 servings:

  • 1 cup(s) oil (olive oil), extra virgin
  • 1 cup(s) basil, finely chopped
  • ½ cup(s) mint, finely chopped
  • ½ cup(s) walnuts
  • 2 tbsp orange(s), peel, grated
  • 2 cloves garlic
  • ½ tsp salt
  • ½ tsp green pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Place the walnuts, peeled garlic cloves, basil, and mint in a blender. Blend on medium speed until smooth. While blending, gradually add the olive oil, orange zest, salt, and pepper. Once the oil has been absorbed by the remaining ingredients, stop the blender and taste the pesto. If it’s still too thick, add a little more olive oil and blend for another 2 to 3 minutes. This pesto goes well with green salads or spaghetti.
