Tofu salad

Ingredients for 2 servings:

  • 200 g tofu, diced
  • ¼ iceberg lettuce, cut into strips
  • ¼ cucumber(s), sliced
  • ½ bell pepper(s), yellow, cut into strips
  • ½ red bell pepper(s), cut into strips
  • 4 tbsp corn, from the can
  • 1 tsp lemon juice
  • 1 tsp mustard
  • 2 tbsp water from the corn can
  • 1 tsp paprika powder
  • oil
  • salt and pepper
  • curry powder

Instructions

Working time approx. 12 minutes; Total time approx. 12 minutes

Mix the corn with lemon juice, mustard, oil, cornflour, salt, and pepper. Mix the paprika and curry powder with 2 teaspoons of salt. Toss the tofu in the mixture and fry in a nonstick pan with 1 teaspoon of oil for 1 minute on each side. Mix the iceberg lettuce with the cucumber, bell pepper, and the dressing. Top with the tofu cubes.
