Ingredients for 4 servings:
- 1 liter meat broth or chicken broth
- 1 liter of water
- 2 tsp salt
- 4 tbsp vinegar
- 4 eggs, very fresh
- 4 slice(s) toast, white bread or sandwich
- 2 tbsp butter
- 1 shot of dry white wine
- 50 g cheese (Emmental), grated
- 50 g Parmesan, grated
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Soup
Heat the broth. Bring plenty of water to a boil. Add salt and vinegar and poach the eggs. Toast slices of white bread on both sides in butter, then place them in 4 soup bowls. Place the poached eggs on top, pour in the broth seasoned with wine, and sprinkle generously with cheese.
