  • 3 medium egg yolks (only from very fresh eggs)
  • 6 tbsp sugar
  • 1 packet of vanilla sugar
  • 1 pinch of nutmeg (small pinch)
  • 3 tsp cognac (e.g. Chantré)
  • 125 ml cream
  • 1 piece(s) of dark chocolate
  • 1 tbsp almond flakes

Original recipe with strawberries. Great for birthdays and parties!

Peel and halve the fruit, and sprinkle with sugar. Let stand for about 15 minutes (if using strawberries). For the cream, beat the egg yolks with the sugar, vanilla sugar, nutmeg, and cognac until frothy. Whip the cream until stiff peaks form and fold in. Divide the strawberries or cherries among 4 or 5 dessert glasses and pour the cream over them. Refrigerate for about 10 minutes. Using a knife, scrape chocolate shavings over the servings, if desired, and serve garnished with the flaked almonds. Tip: This dish is usually made with fresh strawberries. However, I always use morello cherries—strawberries aren’t always available, and this recipe is simply delicious with cherries.
