Pickled cheese with garlic and basil

Ingredients for 10 servings:

  • 2 balls of mozzarella
  • 3 packs of Camembert(s)
  • 1 pack of cheese (Harzer Roller)
  • 1 pack of feta cheese
  • 1 pot of basil, plucked and slightly chopped leaves
  • 1 bulb(s) garlic, coarsely chopped
  • 1 tbsp pepper, freshly ground
  • 1 tbsp salt
  • 1 liter of oil (sunflower oil)

Instructions

Working time approx. 30 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 30 minutes

Pour the oil into a large bowl. Add the chopped garlic, pepper, salt, and basil and mix well. Cut all cheeses into large cubes and fold in well. Transfer to sealable jars, ensuring the cheese is well coated with oil. The cheese should marinate in the refrigerator for at least 6 hours before eating. The cheese will keep chilled for about a week. The cheese tastes best with fresh baguette and grilled vegetables.
