Stuffed pork fillet

Ingredients for 4 servings:

  • 600 g pork fillet(s) in one piece
  • 4 slice(s) ham, raw
  • 2 tbsp mustard
  • 1 m.-large onion(s), finely chopped
  • 1 bunch parsley, finely chopped
  • 300 g mushrooms, fresh, chopped
  • 150 g cream cheese (e.g. Boursin)
  • salt and pepper
  • Paprika powder
  • olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Slice the pork fillet lengthwise, but do not cut all the way through. Flatten it and season the outside well with salt, pepper, and paprika. Brush the inside with mustard and place the raw ham on top. For the filling, sauté the onion in a little hot olive oil. Add the parsley and mushrooms and fry everything until softened. Then let it cool. Then add the cream cheese and mix in. Spread this filling over the raw ham, leaving a border of about 1 cm free along the long side. Now fold the fillet over, secure the seam with toothpicks, and place it in an ovenproof dish. Cook in a preheated oven at 200°C for about 30 minutes.
