Hearty rice casserole

Ingredients for 5 servings:

  • 750 g minced meat, mixed
  • 2 bell peppers, red and yellow
  • 1 can of tomatoes, chopped
  • 5 gherkins
  • 250 g rice
  • 2 cups whipped cream
  • 200 g cheese (Emmental), grated
  • 1 onion(s)
  • 1 can of corn
  • salt and pepper,
  • Paprika powder
  • chili powder

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour

Fry the ground beef until crumbly, add the diced onion, and sauté. Add the sliced ​​bell pepper, corn, and chopped tomatoes and sauté. Season to taste. Meanwhile, cook the rice. In a large casserole dish, layer half of the ground beef and half of the rice, alternating layers. Pour the cream over the meat and finally sprinkle with the cheese. Cover with a lid or aluminum foil. Bake for 25 minutes at 200°C (400°F) using a fan oven, then uncover and bake for another 10 minutes, until the cheese is nicely browned.
