Ingredients for 4 servings:

  • 5 rolls, stale
  • 375 ml milk
  • 50 g sugar
  • 2 egg yolks
  • 1 tbsp flour
  • 1 pinch of baking powder
  • 30 g almond(s), grated
  • 1 tsp, leveled flavoring (lemon peel flavoring)
  • 1 pinch of salt
  • 2 egg whites, beaten to snow
  • 750 g fruit (e.g. apples, sour cherries, plums or apricots)
  • n. B. Breadcrumbs for sprinkling
  • n. B. Sugar for sprinkling

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the rolls into small pieces and soak them in the milk. Wash and cut seasonal fruit into bite-sized pieces. Cream the butter, sugar, and egg yolk until fluffy. Add the softened rolls along with the flour, baking powder, almonds, and lemon zest flavoring. Carefully fold in the beaten egg whites. Pour half of the batter into a baking dish. Spread the fruit on top and spread the remaining batter on top. Sprinkle some breadcrumbs and sugar over the mixture, if desired. Bake the Obstmichl for about 45-50 minutes in a preheated oven at 200°C. Then turn off the oven and let it bake for another 5-10 minutes. Tip: Apples cut into wedges are a great choice for the Obstmichl.
