Ingredients for 8 servings:

  • 10 rolls, stale
  • 375 ml milk, lukewarm
  • 1 tsp cinnamon
  • 1 kg cherry(s) (jar), drained
  • 1 lemon(s) unsprayed, grated peel
  • 80 g butter
  • 4 egg yolks
  • 100 g sugar
  • 4 egg whites, stiffly beaten
  • 20 g butter for the mold
  • some butter, cut into flakes

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Franconian Kirschnmännla or Kirschenmichel

Cut the rolls into thin slices and place in a bowl. Pour the lukewarm milk over them and let them soak. Make a foamy mixture of butter, egg yolks, and sugar, add the cinnamon and grated lemon zest, and mix in the soaked rolls. Fold in the cherries and beaten egg whites. Pour the mixture into a greased baking dish and top with butter flakes. Bake in a preheated oven at 175°C for about 1 hour. The casserole can be eaten warm, but it also tastes delicious chilled and will keep for a few days. Serve with vanilla sauce, whipped cream, a scoop of vanilla ice cream, or a combination of the two.
