Carrot and potato stew

Ingredients for 6 servings:

  • 500 g carrot(s)
  • 500 g potatoes
  • 1 can of green beans
  • 2 large onions
  • 2 packs of Mettenden
  • some salt and pepper
  • ½ bunch parsley
  • 500 ml vegetable stock

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Peel the potatoes and carrots and dice them. Peel and dice the onion. Layer the vegetables in a pot as follows: carrots, potatoes, broad beans, onions, and finally, the chopped Mettenden sausages. Add enough stock to cover. Cook on medium heat for about 30-45 minutes. Season with salt and pepper to taste. Garnish with parsley.
