Michel’s Hessian garlic dip
Put the sour cream in a bowl and stir until smooth. Stir in the sour cream. It should be quite smooth. Add the olive oil. Now stir in the mayonnaise. The dosage is important here, as each type of mayonnaise is very different, so 2 tablespoons is a bit much. You don’t want the mayonnaise taste to come through, just reduce the acidity a little. Season with salt and pepper. Add a little parsley. Now add the garlic. The motto here is: better too much than too little. It’s best to add this last so you don’t keep seasoning with garlic. Now let it sit for a while. If you like, serve it traditionally with a grated cucumber (although we leave it blank). Serve with baguette and it’s ideal for dipping at a party.
