Ingredients for 1 servings:

  • 200 g almonds, ground
  • 400 ml soy milk (soy drink), alternatively water
  • 2 cardamom pods
  • e.g. agave syrup or sugar

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Mix the almonds with the soy milk and let it steep for about 1 hour. Stir the mixture occasionally. When the almonds have swollen a little and the mixture has thickened, add some freshly ground cardamom. Two to three capsules should be enough, depending on your taste. Then add the agave syrup or other sweetener and mix well. The mixture needs a while to steep; the longer you let it steep, the more intense the almond flavor becomes. Finally, pour the almond mixture through a sieve; if the sieve isn’t fine enough, you can also use a kitchen towel. After filtering, the consistency should be similar to milk. You can vary the spices a lot; anise and cloves also go very well. The quantities given make approximately one glass of almond milk. It also tastes very good warm.
