Kohlrabi and Thyme Soup

The perfect kohlrabi and thyme soup recipe with a picture and simple step-by-step instructions.

  • 4 medium sized Kohlrabi fresh
  • 1 bunch Spring onions fresh
  • 3 tbsp Butter
  • Salt
  • Pepper from the grinder
  • Freshly grated nutmeg
  • 500 ml Vegetable stock
  • 0,25 bunch Thyme
  • 200 ml Cream 10% fat
  1. Clean, peel and wash the kohlrabi and cut into small pieces. Clean and wash the spring onions and cut into rings.
  2. Heat the butter in a saucepan and sauté the kohlrabi pieces with the spring onions in them. Season with salt, pepper and nutmeg.
  3. Pour the vegetable stock over everything and let it steep for about 10 minutes over a mild heat. Wash, dry and roughly chop the thyme.
  4. Stir the cream into the soup and lightly puree everything with the blender. Serve the soup garnished with thyme.
