Kohlrabi and Thyme Soup
The perfect kohlrabi and thyme soup recipe with a picture and simple step-by-step instructions.
- 4 medium sized Kohlrabi fresh
- 1 bunch Spring onions fresh
- 3 tbsp Butter
- Salt
- Pepper from the grinder
- Freshly grated nutmeg
- 500 ml Vegetable stock
- 0,25 bunch Thyme
- 200 ml Cream 10% fat
- Clean, peel and wash the kohlrabi and cut into small pieces. Clean and wash the spring onions and cut into rings.
- Heat the butter in a saucepan and sauté the kohlrabi pieces with the spring onions in them. Season with salt, pepper and nutmeg.
- Pour the vegetable stock over everything and let it steep for about 10 minutes over a mild heat. Wash, dry and roughly chop the thyme.
- Stir the cream into the soup and lightly puree everything with the blender. Serve the soup garnished with thyme.
