- 150 g Fig pulp

- 125 ml Dry red wine

- 0,25 tsp Red chilli flakes

- 160 g Preserving sugar 2: 1
preparation
- Peel the figs (8 pieces), remove the pulp, weigh 150 grams and cut into small pieces … measure red wine … weigh preserving sugar
Manufacturing
- Mix the fruit, wine, chilli and preserving sugar in a saucepan and leave to marinate for about 60 minutes … bring to a boil, remove the foam and boil for about 7-10 minutes … carry out a jelly test … fill into prepared preserving jars , close and let cool down for about 5 minutes standing upside down … turn over and let cool down completely
Storage & shelf life
- Store closed jars in a cool, dark place where the fig jam will keep for several months … store the partially opened jar in the refrigerator and use up within a few weeks
