Heimis Farmer’s Breakfast

The perfect heimis farmer’s breakfast recipe with a picture and simple step-by-step instructions.

  • 500 g Waxy potatoes
  • 100 g Onion
  • 100 g Diced Bacon
  • 100 g Red peppers
  • 6 Eggs
  • 200 ml Milk
  • Salt and pepper
  • 1 Pickled cucumber
  1. Wash the potatoes, put them in a saucepan, cover with water and bring to the boil. Turn down the temperature and cook in 25 minutes, then cool. peel and cut into slices.
  2. Peel and finely chop the onions. Cut the bacon into small cubes. Dice the pickles. Halve the bell pepper, remove the stem, seeds and the white dividers, cut into small cubes.
  3. Whisk the eggs with the milk in a bowl, season with salt and pepper, and mix in the chopped parsley.
  4. Sear the diced bacon in an appropriately sized pan, add the potato slices and onions, fry over medium heat, turning carefully, until the potatoes are golden brown, add the cucumber and bell pepper cubes and fry for another 5 minutes, season with salt and pepper. Pour egg milk over the potatoes. Let everything set over a low heat, stirring gently with a wooden spoon.
