Cakes: Strawberry Cake

- For the biscuit:
- 2 Eggs
- 80 g Sugar
- 1 Msp Ground vanilla
- 40 g Flour
- 40 g Food starch
- 0,5 tsp Baking powder
- For the cream:
- 150 g Natural yoghurt
- 250 g Qimiq Classic Natural
- 250 g Lowfat quark
- 2 tbsp Strawberry syrup
- 200 g Cream
- For the topping:
- 500 g Strawberries
- 100 ml Strawberry syrup
- 1 packet Red cake topping
- The strawberries laughed at me so much in the shop and since I was supposed to have a coffee visit today, I decided to make a strawberry cake.
- For the sponge cake, separate the eggs and beat the egg whites very stiff. Beat the egg yolks with 2 tablespoons of hot water and slowly pour in sugar and vanilla. Mix the flour, cornstarch and baking powder and sift over the egg yolk mixture. Stir in and carefully fold in the egg white.
- Bake in a preheated oven at 180 ° C for about 20 minutes. Let the cake base cool down
- For the cream, whip the cream until stiff and stir the Qimiq, yogurt, quark and strawberry syrup in a second container until smooth. Then stir in the cream. Place the cake base on a cake plate and put a shape ring around it. Put the quark mixture on the cake base and smooth it out. Chill for at least 2 hours.
- Wash, clean and slice the strawberries. Distribute on the quark mass. For the icing, fill up the syrup with water up to 250 ml, stir in the icing powder and bring to the boil while stirring. Pour tablespoon at a time over the strawberries, do not pour, otherwise the curd mixture will be too soft.
- Chill the cake for another hour. Then just set the table and welcome the guests. Good Appetite.
