The perfect banana walnut muffins recipe with a picture and simple step-by-step instructions.
- 300 g Flour
- 0,5 tsp Baking soda
- 1 tsp Baking powder
- 1 pinch Ground carnations
- 1 pinch Nutmeg
- 1 Msp Cinammon
- 140 g Soft butter or margarine
- 130 g Brown sugar
- 2 Pc. Eggs, size L
- 3 Pc. Medium-Sized bananas
- 60 g Coarsely chopped walnuts
- 35 g Raisins
- Mix the soft butter and sugar until frothy. Add eggs and stir for a few minutes. Peel the bananas and puree them finely (or mash them finely with a fork). Briefly stir into the egg mixture. Mix the flour, baking powder, baking soda, cinnamon, nutmeg and cloves well in another bowl. Mix the dry ingredients with the wet ingredients briefly. Not with a hand mixer, but preferably with a spatula or a wooden spoon. Only until the ingredients have just mixed. A little unmixed flour can still be seen.
- Briefly fold in the raisins and chopped nuts. Line a 12-cup muffin tin with paper liners and distribute the dough in it.
- Bake in the preheated oven on the middle rack at 190 degrees for about 20-25 minutes until golden.
