Apple Pie, Covered
The perfect apple pie, covered recipe with a picture and simple step-by-step instructions.
for the dough
- 300 g Flour
- 2 tsp Baking powder
- 100 g Sugar
- 1 packet Bourbon vanilla sugar
- 1 pinch Salt
- 2 piece Egg
- 2 tbsp Milk
- 120 g Butter
For the apple filling
- 2 kg Apple Breaburn
- 1 tbsp Water
- 50 g Sugar
- 0,5 tsp Ground cinnamon
For the casting
- Powdered sugar
- Water
For the dough
- Preheat the oven to 150 ° C.
- Mix the flour and baking powder, sieve on a table top, make a well in the middle.
- Add the sugar, vanilla sugar, salt, 1 egg and 1 tablespoon of milk, mix with some of the flour to a thick paste.
- Cut the butter into pieces, place on the porridge, cover with flour, quickly knead all ingredients from the center to a smooth dough, if it sticks, put it in the fridge for a while.
- Roll out about half of the dough on the bottom of a greased springform pan (diameter about 26 cm), prick several times with a fork and bake in the preheated oven for about 10 minutes.
- When the base is lightly browned, take it out of the oven and leave it in the pan until further processing. Put aside.
- Increase the temperature of the oven to 180 ° C.
- Wrap the remaining dough in cling film and store in the refrigerator.
For the filling
- Peel, quarter and core apples, cut into small cubes.
- Steam the apple pieces with water, sugar and cinnamon in a saucepan while stirring, leave to cool a little.
to complete the cake
- Roll out the remaining dough into a sheet the size of the springform pan, shape the rest into a roll, place it on the pre-baked base as an edge, pressing it against the mold so that the edge is about 3 cm high.
- Spread the filling on the base and cover with the pastry sheet.
- 1 Separate the egg. Beat the egg yolks with 1 tablespoon of milk, brush the pastry with it, prick several times with a fork.
- Now bake the cake in the preheated oven at 180 ° C for about 20 – 25 minutes until it is golden yellow from above. Remove from the mold and let cool down.
- Mix powdered sugar with water until it has a mushy consistency. Spread it on top of the cake.
