Light Sausage Salad

The perfect light sausage salad recipe with a picture and simple step-by-step instructions.

  • 4 piece Silesian veal sausages
  • 70 g Arugula
  • 4 piece Spring onions fresh
  • 1 bunch Radish
  • 1 tbsp Honey mustard
  • 3 tbsp White balsamic vinegar
  • 3 tbsp Sunflower oil
  • Black pepper from the mill
  • Salt
  • Sugar
  1. Let the sausages simmer for about 15 minutes. Make sure that it doesn’t boil. In the meantime, wash the rocket thoroughly and spin dry. Wash the spring onions and cut into thin rings. Clean and wash the radishes and also cut them into slices.
  2. Prepare a creamy vinaigrette from mustard, vinegar, oil, salt, pepper and sugar.
  3. Peel the skin off the sausages and cut into slices. Mix with the radishes, spring onions and the vinaigrette and let steep for about 30 minutes. Then fold in the rocket and serve immediately.
