Iced Frog Prince Kisses Mr. Ribbeck (Lars Steinhöfel)

The perfect iced frog prince kisses mr. ribbeck (lars steinhöfel) recipe with a picture and simple step-by-step instructions.

  • 3 piece Cucumbers
  • 1,5 piece Garlic cloves
  • 1 Splash Lemon juice
  • 600 g Yogurt
  • 15 ml Cream
  • 1 pinch Salt
  • 1 pinch Sugar
  • 1 pinch Chilli (cayenne pepper)
  • 9 sheet Mint
  • 3 tbsp Chopped walnuts
  • 2 piece Avocados
  • 2 piece Pears
  • 1 tsp Honey
  • 1 shot Balsamic vinegar
  • 1 shot Oil
  1. Peel, halve, core and dice the cucumbers. Peel the garlic and chop in to fine slithers.
  1. Very finely puree the cucumber except for a few cubes with garlic, lemon juice and yoghurt. Add the cream and stir over a bowl of ice water to a homogeneous, fluffy soup.
  1. Season with salt, sugar and cayenne pepper to taste. Chill for at least 1 hour.
  1. Roughly cut the mint leaves. Roast the walnuts in a coated pan without fat and add them to the soup while still hot, stir the soup well again. Sprinkle with mint and diced cucumber.
  1. Finally, garnish the edge of the plate with avocado and pear slices drizzled with honey, balsamic vinegar and oil and serve.
