Iced Frog Prince Kisses Mr. Ribbeck (Lars Steinhöfel)

- 3 piece Cucumbers
- 1,5 piece Garlic cloves
- 1 Splash Lemon juice
- 600 g Yogurt
- 15 ml Cream
- 1 pinch Salt
- 1 pinch Sugar
- 1 pinch Chilli (cayenne pepper)
- 9 sheet Mint
- 3 tbsp Chopped walnuts
- 2 piece Avocados
- 2 piece Pears
- 1 tsp Honey
- 1 shot Balsamic vinegar
- 1 shot Oil
- Peel, halve, core and dice the cucumbers. Peel the garlic and chop in to fine slithers.
- Very finely puree the cucumber except for a few cubes with garlic, lemon juice and yoghurt. Add the cream and stir over a bowl of ice water to a homogeneous, fluffy soup.
- Season with salt, sugar and cayenne pepper to taste. Chill for at least 1 hour.
- Roughly cut the mint leaves. Roast the walnuts in a coated pan without fat and add them to the soup while still hot, stir the soup well again. Sprinkle with mint and diced cucumber.
- Finally, garnish the edge of the plate with avocado and pear slices drizzled with honey, balsamic vinegar and oil and serve.
