Sweet Rolls with Filling

filling

  • 40 g Sugar
  • 40 ml Milk
  • 0,5 Vanilla pods (pulp only)
  • 60 g Ground almonds
  • 1 pinch Salt
  • 1 tbsp Butter

Yeast dough

  • 300 g Flour
  • 1 packet Dry yeast
  • 75 ml Milk
  • 4 tbsp Sugar
  • 25 ml Water
  • 1 pinch Salt

  1. Melt the butter and mix it with all the other ingredients. Put something into the fridge. (If you want it to be easier, you can also fill the rolls with pieces of fruit or jelly)

  1. Heat the milk and water, add the yeast and half of the sugar and leave to swell for 15 minutes.
  1. Mix the flour, the remaining sugar and the pinch of salt, then add the yeast mixture. Now let the dough rise, about 1 hour, until it has doubled.
  1. Knead the yeast dough again and then shape it into a roll. Cut this into 12 equal parts. Now knead and roll out into circles. Put some of the filling in the middle, then pull the edges up and knead together so that the filling is completely enclosed.
  1. Let the rolls rise again briefly and then bake at 180 ° C for about 15-20 minutes.
  1. Tip 6: if you wanted them to be particularly brown, brush them with an egg yolk and milk mixture. Tip 2: I tried my hand at Easter bunny rolls. With moderate success, because I didn’t get the rolls round, if you want to try it: Simply cut round rolls and then cut the ears off the dough with the help of scissors. Press in the nose and eyes with the tip of the scissors. Tip 3: Also delicious with fruit or other nuts, I have already tried it with pears.
