Apples in Sand (cake)

The perfect apples in sand (cake) recipe with a picture and simple step-by-step instructions.

  • 250 g Butter or margarine
  • 200 g Sugar
  • 4 Eggs
  • 250 g Flour
  • 2 tsp Baking powder
  • 1 tsp Grated lemon peel
  • 2 tbsp Rum
  • 1 pinch Salt
  • 600 g Apples
  • 50 g Flaked almonds
  1. Beat the butter until frothy, pour in the sugar and stir.
  2. Stir in the eggs one at a time.
  3. Mix the flour, baking powder and add to the dough.
  4. Add lemon zest, rum and salt and stir well.
  5. Place the dough in a greased springform pan (26 cm diameter).
  6. Peel and quarter the apples. Score and distribute evenly on the dough.
  7. Scatter the almonds on top and bake for 60 minutes at 180 ° C in a preheated oven.
  8. After baking, brush the apples with jam (possibly quince jelly or apricot jam) so that they don’t dry out too much.
  9. Sprinkle with powdered sugar before serving.
