Stracciatella Ricotta Dessert with Apricots

The perfect stracciatella ricotta dessert with apricots recipe with a picture and simple step-by-step instructions.

  • 300 g Apricots fresh / or canned
  • 20 g Butter
  • 100 g Sugar
  • 300 g Ricotta
  • 50 g Grated chocolate plus chocolate pieces to decorate
  • 200 g Cream
  1. Wash the apricots, cut in half, stone and cut into thin slices. Melt the butter in a pan, then 2 tbsp. Sugar and 3 tbsp. When the sugar has dissolved, add the apricots to the pan, stir gently and simmer for about 3-5 minutes. Remove the pan from the heat and let the apricots cool.
  2. In the meantime, mix the ricotta with the remaining sugar and the chocolate chips, whip the cream separately and fold into the ricotta.
  3. Layer the apricots and cream in glasses, sprinkle with chocolate chips and serve.
