Stracciatella Ricotta Dessert with Apricots

Ingredients
 

  • 300 g Apricots fresh / or canned
  • 20 g Butter
  • 100 g Sugar
  • 300 g Ricotta
  • 50 g Grated chocolate plus chocolate pieces to decorate
  • 200 g Cream

Instructions
 

  • Wash the apricots, cut in half, stone and cut into thin slices. Melt the butter in a pan, then 2 tbsp. Sugar and 3 tbsp. When the sugar has dissolved, add the apricots to the pan, stir gently and simmer for about 3-5 minutes. Remove the pan from the heat and let the apricots cool.
  • In the meantime, mix the ricotta with the remaining sugar and the chocolate chips, whip the cream separately and fold into the ricotta.
  • Layer the apricots and cream in glasses, sprinkle with chocolate chips and serve.
