Stracciatella Ricotta Dessert with Apricots
The perfect stracciatella ricotta dessert with apricots recipe with a picture and simple step-by-step instructions.
- 300 g Apricots fresh / or canned
- 20 g Butter
- 100 g Sugar
- 300 g Ricotta
- 50 g Grated chocolate plus chocolate pieces to decorate
- 200 g Cream
- Wash the apricots, cut in half, stone and cut into thin slices. Melt the butter in a pan, then 2 tbsp. Sugar and 3 tbsp. When the sugar has dissolved, add the apricots to the pan, stir gently and simmer for about 3-5 minutes. Remove the pan from the heat and let the apricots cool.
- In the meantime, mix the ricotta with the remaining sugar and the chocolate chips, whip the cream separately and fold into the ricotta.
- Layer the apricots and cream in glasses, sprinkle with chocolate chips and serve.
