Our version of Strammer Max

Top the bread with the ham and cheese. Spread the ketchup on top. Cut the tomato half into about 4 slices and place them on top. Peel the spring onion, cut it into small rings, and arrange them on top. Heat some clarified butter in a pan, fry the egg until fried, and season with salt, pepper, and paprika. Carefully place it on the bread and serve immediately. This is the freshest, most visually appealing, and most spring-like version of a fried egg sandwich, also known as “Strammer Max.”
