Bavarian ham noodles

Ingredients for 2 servings:

  • 250 g pasta (spirelli)
  • 200 g ham, cooked
  • 1 m.-sized onion(s)
  • 3 eggs
  • salt and pepper
  • Clarified butter
  • possibly herbs, fresh

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cook the pasta in salted water until al dente, then pour into a colander and drain well. In the meantime, cut the cooked ham into thin 5-8 cm strips and dice the onions. Heat clarified butter in a deep pan. Sauté the ham strips and onions until lightly browned. Add the pasta and mix everything together. Season with pepper and salt if desired. Add the eggs one at a time and stir well into the pasta mixture until set. If you like, you can add some fresh herbs. This goes well with a fresh salad or a mixed Bavarian salad consisting of Bavarian potato salad, white cabbage with diced bacon, lettuce, tomatoes, cucumbers, grated radishes, and carrots. Note: I ate this dish in a Bavarian restaurant and have combined it into this recipe from memory. A salad is a must as a side dish, because otherwise the food might taste a bit monotonous if eaten on its own. I remember this dish from my childhood, so it’s definitely something for kids too!
