Ingredients for 4 servings:

  • 1 kg potatoes
  • 500 ml buttermilk
  • 100 g bacon
  • Salt

quick traditional potato dish

This dish is relatively quick and easy to prepare. Peel the potatoes. They must be grated by hand or by machine. The grater should be very fine so that it forms a kind of mush, not stripes. Dice the bacon and fry it in a roasting pan or large casserole dish. Add the buttermilk and a little salt to taste (1-2 teaspoons) to the potato mixture and stir well. Once the bacon is cooked, pour the potato mixture over it in the roasting pan so that the bacon cubes rise to the top. Then bake the whole thing in the oven at around 200 degrees Celsius (convection oven) or 230 degrees Celsius (top and bottom heat) for around 40-50 minutes, until the surface begins to turn a nice and crispy brown. Applesauce goes very well as a side dish or dessert. The Getzen also tastes very good cold a day later if you have any leftovers.
