Mexican Fried Rice with Avocado and Fried Egg

Ingredients
 

  • 1 piece Small red onion
  • 2 piece Garlic cloves
  • Red hot peppers to taste
  • 1 piece Avocado
  • Salt and pepper for seasoning
  • 3 tbsp Olive oil
  • 1 pack Uncle Ben’s Mexican Express Rice
  • 80 g Canned corn (drained well)
  • 100 g Canned kidney beans (drained well)
  • 2 piece Eggs
  • 0,5 handful Coriander leaves

Instructions
 

  • Peel the onion and garlic. Halve the onion and cut into strips. Cut the garlic into slices. Cut the pepperoni into rings. Halve the avocado, remove the core, cut into slices and season with salt and pepper.
  • Heat the oil in a coated pan and fry the Uncle Ben’s Mexican Express Rice together with the garlic for about 5 minutes. Add the corn and kidney beans and fry briefly.
  • Heat the remaining oil in another pan and fry the eggs into fried eggs and season with salt and pepper.
  • Serve the rice and place the fried eggs on top. Spread the avocado, onions and coriander around it and sprinkle everything with the pepperoni.
  • Tip 5: If you like, you can sprinkle a little lime juice on everything.
