Pork fillet Spanish style

Ingredients for 4 servings:

  • 8 slice(s) pork fillet(s), thick (approx. 600g)
  • 1 apple
  • 10 g almond(s), chopped
  • 1 tsp breadcrumbs
  • 1 pinch(s) of sugar
  • 1 pinch of cinnamon
  • 1 pinch of garlic powder
  • Salt
  • Black pepper (freshly ground)
  • 4 tbsp olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Using a sharp knife, cut a pocket into each slice of meat. Peel the apple, core it, and coarsely grate it. Add the almonds and breadcrumbs. Season with sugar, cinnamon, and garlic powder. Season the fillets inside with salt and outside with salt and pepper. Fill the pockets with the apple mixture (do not overfill) and secure with toothpicks. Heat oil in a pan and fry the meat slices for 5 minutes on each side.
