Ingredients for 20 servings:

  • 200 g butter
  • 200 g sugar
  • 1 pinch of salt
  • 1 vanilla sugar
  • 300 g flour
  • 3 tsp, leveled baking powder
  • 4 eggs
  • 40 g candied orange peel
  • 40 g candied lemon
  • 40 g cherry(s) (topping cherries)
  • 20 g pickled ginger
  • ½ tsp clove(s)
  • 150 g raisins
  • 50 g almonds, coarsely chopped
  • Fat for the mold

Instructions

Working time approx. 1 hour 30 minutes; Total time approx. 1 hour 30 minutes

Cream the butter until creamy, then stir in the sugar, salt, and vanilla sugar and beat until fluffy. Combine the flour and baking powder. Stir in the flour alternately with the eggs. Finely dice the candied orange peel, candied lemon peel, cherries, and ginger. Fold everything into the batter along with the clove powder, raisins, and chopped almonds. Pour the batter into a greased loaf pan and smooth the surface. Bake in a preheated oven at 180°C (gas mark 2 / fan oven: 160°C) for approximately 75-90 minutes.
