Quark Stollen

Ingredients for 12 servings:

  • 250 g raisins
  • 50 g candied lemon peel
  • 50 g candied orange peel
  • 150 g almonds, slivered
  • 4 cl rum
  • 500 g flour, (405)
  • 1 packet of baking powder
  • 250 g quark (low-fat quark)
  • 150 g butter
  • 1 m.-sized egg(s)
  • ½ tsp salt
  • 1 lemon(s), peel and juice of an untreated
  • 1 packet of vanilla sugar
  • Powdered sugar, for dusting

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the raisins with warm water, dry them, and marinate them with candied lemon peel, candied orange peel, and the slivered almonds in rum. Meanwhile, sift the flour and baking powder into a bowl. Add the quark, sugar, cut butter, egg, salt, lemon zest and juice, and vanilla sugar; knead into a firm dough. Loosely fold the prepared fruit into the dough. Butter a Stollen tin and press the dough into it. Place the tin, dough-side down, on a baking sheet lined with baking paper and bake immediately in a preheated oven at 180 degrees Celsius for 50 to 55 minutes. Remove the Stollen from the oven. Carefully lift the tin and let the Stollen cool. Finally, sprinkle with icing sugar.
